Babylon joins up with the Sustainable Restaurant Association

Babylon Restaurant has now signed up to the Sustainable Restaurant Association (SRA), as part of its commitment to a sustainable food experience at The Roof Gardens.
The SRA is a not for profit membership organisation helping restaurants to become more sustainable and assisting diners to make more sustainable choices when dining out.
Babylon already uses seasonal, sustainable fish; sources meat from an award-winning ethical butcher; uses free range eggs and cooks with the herbs and produce grown on their very own roof gardens. However, with the help and support of the SRA, they want to continue to improve the already green menu, promote the benefits of sustainable food to their guests and become the industry leader in luxury sustainable dining.
Head chef Ian Howard, who recently took part in the Selfridges “Project Ocean” scheme says that “using sustainable produce is a cause I feel strongly and something I try to incorporate in my recipes wherever I can”.
The Roof Gardens and Babylon Restaurant are part of Virgin Limited Edition, Richard Branson’s award-winning collection of luxury retreats.
